Ce p&acirc;tissier &ldquo;moderne&ldquo;, comme il se d&eacute;finit lui-m&ecirc;me, amoureux des saveurs exalt&eacute;es par des accords simples et des visuels &eacute;pur&eacute;s, d&eacute;voilera, d&egrave;s janvier 2018, ces cr&eacute;ations d&eacute;licates au Bristol Paris.<\/p>\n<p><\/p>\n<p>N&eacute; &agrave; Bergerac, ce fan de v&eacute;lo se destinait davantage &agrave; manier le guidon que la spatule. C&rsquo;est au c&oelig;ur des vignes de Monbazillac, aupr&egrave;s de son p&egrave;re, chef de cuisine, qu&rsquo;il d&eacute;couvre la p&acirc;tisserie.<\/p>\n<p><\/p>\n<p>Une rencontre d&eacute;cisive avec son mentor <strong>Thierry Dieumegard<\/strong> va transformer son int&eacute;r&ecirc;t pour le monde des g&acirc;teaux, en v&eacute;ritable passion. Aid&eacute; par un talent incontestable, <strong>Julien Alvarez<\/strong> conna&icirc;t rapidement les douceurs de la reconnaissance.<\/p>\n<p><\/p>\n<p><strong>Champion du Monde de P&acirc;tisserie en 2011<\/strong>, Meilleur Espoir P&acirc;tissier en 2014, il rejoint le <strong>Peninsula Paris<\/strong> comme chef P&acirc;tissier pendant deux ans et devient ensuite chef p&acirc;tissier ex&eacute;cutif du <strong>Caf&eacute; Pouchkine<\/strong>.<\/p>\n<p> &laquo; <em>Je suis tr&egrave;s heureux d&rsquo;accueillir Julien Alvarez dans la grande famille du Bristol.
